A few months back my wife came across a recipe for Ginger Pork in a book about Cooking for One Or Two. Though this recipe is modified from that to make it healthier, it is very good and easy to make.
Ginger Pork
1 tablespoon vegetable oil (I used extra-virgin olive oil)
1/2 pound pork tenderloin, cut into thin strips
1 garlic glove, minced – NOT pressed.
2 tablespoons low-sodium soy sauce.
1/2 teaspoon ground ginger
1/2 cup water
1-1/2 teaspoons arrowroot
Heat the oil in a large skillet or wok over medium high heat. Stir-fry the pork and garlic for 3 minutes. Combine soy sauce and ginger, add to skillet. Reduce heat to medium and stir fry until pork is no longer pink. Combine water and cornstarch until smooth and add to skillet. Bring to a boil and stir for 2 minutes.
Serve over Organic Brown Rice.
